Quality Time

You know.. The one that doesn't involve you checking your Facebook App. on your phone. The one where instead of texting, you use words and gestures to communicate. The world is changing so rapidly that people get caught up trying to "catch up" that they start taking the things and relationships that should be a priority for granted. Here is an awesome recipe for some cornbread that I experimented with yesterday. I can't take credit for the chicken soup, but I am sure every family has a recipe for that. 

Ingredients 

1/4 cups of butter
2/3 cups of sugar
2 eggs (important: MUST BE FROM FREE ROAMING CHICKENS)
1 cup of organic whole milk
1/2 teaspoon of baking powder
1 cup of organic cornmeal
1/2 teaspoon of salt
1 cup of organic all purpose flour

1. Preheat the over to 375˚F
2. Butter up a 9x9 pan
3. Melt the butter
4. Mix everything up
5. Place batter in the pan
6. Bake for 30 minutes or until a toothpick comes out clean.

Learning Center opens June 4th

After working at different learning centers throughout the years I am finally opening my own! I was on vacation last month and it struck me, why not do it now?

Math and Reading K-12 tutorials will be provided as well as test prep, and adult ESL classes. The center will run it's first class on June 4th at 5PM and I could not be more excited about it! 

Thursdays 8AM-4PM                              Mathematics
Fridays 8AM- 4PM                                  Reading
Thursdays and Fridays 5PM                   Group ESL class

The center is located on 1846 Snake River Road, Suite B, Katy, TX 77449

I recently received a self titled publication from Houston Wilderness which included a map of the 24 -county region of Southeast Texas featuring ten unique regions. My family happens to live right next to the PRAIRIE SYSTEMS as we have a house in Katy. I called Katy Prairie to ask which one of their sites would be the best one to look at, but got their VM system so I decided to go to their Nelson Farms Preserve click on the image to open up my flickr page and take a look at some of the neat pictures I took on my journey to the Nelson Farms Preserve.

On my way back home I stumbled upon a man made lake system. I plan on going back, as I met an awesome park officer who gave me tip on when the project will prospectively be finished. We were talking about having some of the students at Spring Shadows Elementary visit/volunteer at the site, I think a field trip is in order.

Organic Garden at Spring Shadows Elementary

As an Education Advocate I like to take some time and visit schools to teach students simple, green methods to reduce their ecological footprint. I have been seeing the students at Spring Shadows Elementary for a couple months now, and noticed their un-utilized garden in the back. When I was a student, we used the garden to plant sweet potatoes, carrots, among other produce, and even had a chance to install a fish pond. It was the highlight of my day to walk out back with the rest of the students and look at the beautiful water lilies, immense gold fish, and the nature that the vegetation brought in. I felt it was a duty to not only bring life back to the garden, but to help the community in doing so as well.

We are planning on partnering up with
JMG an organization dedicated in blending education with gardening, and a wonderful resource center. As well as PROJECT ORANGE THUMB which provides grants for ideas like these.

With the combined effort of programs like these, Educators, and students I am sure that the project will be a huge success! We are planning on growing seeds and grasses to feed local farm animals, and produce like tomatoes, squash, and potatoes to sell at the local farmers market and donate the proceeds to local families. I would like to thank everyone who was involved in the planning of this project, and look forward to a wonderful gardening season.
